The Recipe Bin: Cajun - Desserts & Candies



    Pecan Pralines
     

     
    2 cups Sugar
    ½ cup Water
    ½ cup White Karo Syrup
    2 cups Pecan Halves
    ½ stick Margarine
    1 tsp Vanilla Extract
     

     
      • Combine the sugar, syrup, water and pecans in a 3 quart saucepan.
      • Stir the mixture over medium heat until sugar is dissolved and mixture comes to a boil.
      • Cook, stiring occasionally, until mixture reaches the soft ball stage.
      • Remove saucepan from heat.
      • Add margarine and vanilla.
      • Allow candy to cool.
      • Whip the mixture.
      • The mixture will gradually change to a lighter color and become creamy.
      • Drop by tablespoonfull onto a buttered cookie sheet.
      • Push mixture from tablespoon with a teaspoon to hasten dropping before praline becomes too firm to shape.
      • The pralines will harden as they cool.
