The Recipe Bin: Cajun - Entrees: Vegetable



    Garlic Mashed Potatos
     

     
    4 lbs Red-skinned Potatoes (Peeled And Cut Into 1" Cubes)
    9 Large Garlic Cloves
    2 tbsp Light Margarine
    1 tbsp Dried Rosemary
    ⅔ cup Fat-free Chicken Broth
    ½ cup Parmesan Cheese (Grated)
    Salt (To Taste)
    Pepper (To Taste)
     

     
      • Bring a large pot of salted water to a boil.
      • Add the potatoes and garlic and cook until both are very tender, about 30 minutes.
      • Drain.
      • Transfer the potatoes and the garlic to a large bowl.
      • Using an electric mixer, beat the potatoes and garlic.
      • Add the margarine and rosemary and beat until smooth.
      • Gradually blend the chicken broth into the potato mixture.
      • Stir in the Parmesan cheese.
      • Season with salt and pepper.
