The Recipe Bin: Hawaiian - Entrees: Beef & Other Meats

    Kalua Pork
     

     

  • 5 lbs pork butt
  • 3 tablespoons hawaiian sea salt
  • 2 tablespoons liquid smoke
  • 8 ti leaves, with ribs removed
  • 1 piece aluminum foil, heavy duty
  •  

     
    1. Make several slashes on the surface of the pork butt.
    2. Rub with salt, then liquid smoke.
    3. Lay out 4 ti leaves on the aluminum foil.
    4. Place pork on leaves and wrap them around the pork.
    5. Cover with remaining leaves in the opposite direction until pork is completely wrapped.
    6. Fold the foil tightly around the pork to make a watertight seal.
    7. Place in a large roasting pan filled with two inches of water and cover pan tightly with foil.
    8. Bake at 350° for 1 hour.
    9. Then lower temperature to 325°; cook until tender (about 3 to 3-1/2 hours).
    10. Unwrap pork from package and shred before serving.
     

    Makes approximately 8 servings.
