    Coconut Rice
     

     

  • 1 ½ cups Rice
  • 1 ½ cups fresh Coconut, shredded
  • 3 tbsp Butter/Ghee
  • 1 medium Onion, chopped
  • 1 pinch Salt
  • 1 tsp Cardamon, ground
  •  

     
    1. Soak Rice for 30 mins in 1 ½ cups water.
       
    2. At the same time, soak Coconut for 30 mins in 2 cups water.
       
    3. Drain rice and set aside. Reserve the water.
       
    4. Blend the coconut, using the water in which it was soaked. Strain and reserve the coconut milk.
       
    5. Heat butter/Ghee in a skillet. Add onions and saute until golden.
       
    6. Add rice and fry a few minutes.
       
    7. Add coconut milk and water in which the rice was soaked. Bring to a boil. Add salt to taste and cardamom. Lower heat and cook until rice is done.
       
     

    Makes approximately 4 Servings.
