The Recipe Bin: Cajun - Desserts & Candies

    Pecan Pralines
     

     

  • 2 cups sugar
  • ½ cup water
  • ½ cup white Karo syrup
  • 2 cups pecan halves
  • ½ stick margarine
  • 1 tsp vanilla
  •  

     
    Combine the sugar, syrup, water and pecans in a 3 quart saucepan. Stir the mixture over medium heat until sugar is dissolved and mixture comes to a boil. Cook stiring occasionally, until mixture reaches the soft ball stage. Remove saucepan from heat. Add margarine and vanilla.

    Allow candy to cool. Whip the mixture. The mixture will gradually change to a lighter color and become creamy. Drop by tablespoonfull onto a buttered cookie sheet. Push mixture from tablespoon with a teaspoon to hasten dropping before praline becomes too firm to shape.

    The pralines will harden. Enjoy.
