The Recipe Bin: Cajun - Entrees: Vegetable

    Garlic Mashed Potatos
     

     

  • 4 lbs red-skinned potatoes, peeled and cut into 1" cubes
  • 9 lg garlic cloves
  • 2 Tbls light margarine
  • 1 Tbls dried rosemary
  • 2/3 cup canned fat-free chicken broth
  • 1/2 cup grated Parmesan cheese
  • salt & pepper to taste

    Bring a large pot of salted water to a boil. Add the potatoes and garlic and cook until both are very tender, about 30 minutes. Drain. Transfer the potatoes and the garlic to a large bowl. Using an electric mixer, beat the potatoes and garlic. Add the margarine and rosemary and beat until smooth. Gradually blend the chicken broth into the potato mixture. Stir in the Parmesan cheese. Season with salt and pepper.
