The Recipe Bin: Cajun - Entrees: Beef & Other Meats

    Baked Ham
     

     

  • 16-18 lb Ham - whole
  • 5 cups Water
  • ½ cup Cider vinegar
  • 2 Celery ribs
  • 2 Bay leaves
  • 1 tsp Thyme
  • 6 Cloves - whole
  • 6 Allspice - whole
  • 2 Garlic cloves - chopped
  • 1 small Onion - chopped
  • 2 cups light Brown sugar - firm pack
  • canned Pineapple slices
  • Cloves
  • Watercress
  • Sprigs of parsley
  •  

     
    Put ham in roasting pan. Combine water, vinegar, celery, bay leaves, thyme, cloves, allspice, garlic and onion; pour over ham. Bake in preheated 350°F oven 3½ to 4 hours, basting once every hour. Remove from oven; cool and remove skin. Sprinkle with brown sugar; decorate with pineapple rings and stud with cloves. Bake in 300°F oven until sugar browns and dries. Garnish with watercress or parsley and serve.
     

    Makes approximately 25 servings.
